­­Warm up before (or after!) trick-or-treating with this super easy, naturally nutritious, festively orange Halloween soup. It’s healthy and sweet—and kids won’t be able to get enough!

Jack-o-Lantern “Guts” Stew
(aka Butternut Squash Purée)

WHAT YOU NEED

  • 2 packs of pre-cut butternut squash (available at Trader Joe’s, Whole Foods, and most grocery stores, including Fresh Direct)
  • 2 sweet onions, chopped in big chunks
  • 2 Macintosh apples, peeled and chopped in big chunks

WHAT YOU DO

  • Throw everything on a large sheet pan
  • Coat with a few Tbsp. of olive oil
  • Sprinkle with salt and pepper
  • Roast at 425 for about 45 minutes
  • Throw everything in a blender, food processor, or vitamix and add 2-4 Tbsp. of your favorite broth (veggie or chicken)
  • Keep adding liquid until desired consistency (thick is good)
  • Serve in black soup bowls, mugs, or pumpernickel bread bowls
  • Garnish with any of the following: chopped scallions, coconut, cashews, or a dollop of Greek yogurt

1. Hollow out mini pumpkins.

2. Turn upside down and roast on a separate sheet pan with squash.

3. Serve soup right out of the mini pumpkins!
