Just in time for Passover, this strawberry butter will perfectly sweeten matzah.
WHAT YOU’LL NEED:

  • 1 Cup Heavy Cream
  • 1/2 Cup Frozen Strawberries (defrosted and juice drained)
  • 1/4 Teaspoon Salt
  • 1/4 Cup Honey
WHAT YOU’LL DO:
  1. Whisk the cream until it begins to break and looks dry.
  2. Drain excess liquid that has formed at the bottom of the bowl. The dry bits are butter.
  3. To preserve the butter, you must wash it. Blend the butter in a blender with cold water on low speed for about a minute. Drain the water and repeat until the water runs clear. Use the back of the of a spoon to drain any remaining water from the butter over a cheese cloth.
  4. Mix the butter with the strawberries, salt and honey until incorporated. Serve with matzah.
