Sail into summer with delicious and fun-to-make snack! Also, a great idea for an appetizer for a nautical-themed party!

WHAT YOU’LL NEED:

  • 1 English Cucumber (cut in half, lengthwise, seeded)
  • 1/2 Cup Plain Cream Cheese
  • 1 Carrot, Peeled and Shredded
  • 4 Thick Cut Slices of Cheddar Cheese (about 1/4 inch thick)
  • Salt and Pepper to taste
WHAT YOU’LL DO:
  1. Reserve 2 tablespoons of carrots
  2. Mix the remaining carrots with cream cheese. Sprinkle the cucumber shells with a pinch of salt and pepper.
  3. Spoon into the cucumber shells.
  4. Cut cheese in a diagonal to make triangle sales.
  5. Place each sail on top of the cream cheese.
  6. Sprinkle on the remaining carrots.
  7. Cut each cucumber in half to serve.

Tips:
  • Try adding halved grape tomatoes to the boats for added veggies.
  • Whole wheat pita cut into triangles is a good substitution for the cheese.
