Cucumber Sailboats

Sail into summer with delicious and fun-to-make snack! Also, a great idea for an appetizer for a nautical-themed party!
WHAT YOU’LL NEED:
- 1 English Cucumber (cut in half, lengthwise, seeded)
- 1/2 Cup Plain Cream Cheese
- 1 Carrot, Peeled and Shredded
- 4 Thick Cut Slices of Cheddar Cheese (about 1/4 inch thick)
- Salt and Pepper to taste
WHAT YOU’LL DO:
- Reserve 2 tablespoons of carrots
- Mix the remaining carrots with cream cheese. Sprinkle the cucumber shells with a pinch of salt and pepper.
- Spoon into the cucumber shells.
- Cut cheese in a diagonal to make triangle sales.
- Place each sail on top of the cream cheese.
- Sprinkle on the remaining carrots.
- Cut each cucumber in half to serve.
Tips:
- Try adding halved grape tomatoes to the boats for added veggies.
- Whole wheat pita cut into triangles is a good substitution for the cheese.
