Fall is here and so is apple season!  This is a fun recipe that you and your child can do alongside one another for a tasty seasonal snack.

Makes about 8 pies

WHAT YOU’LL NEED:

Crust:

  • 2 ½ Cups All-Purpose Flour, Plus More for the Surface
  • 1 Tablespoon Honey
  • 1/8 Teaspoon Salt
  • 8 Tablespoons Unsalted butter, cut into small pieces
  • 3 Tablespoons Very Cold Water

Filling:

  • 4 Cups Apples, Peeled and quartered
  • 1 Cup Apple Cider
  • 1 Lemon, Juiced
  • ¾ Cup Maple Syrup
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
  • 3 Tablespoons Heavy Cream, for sealing the pie

WHAT YOU’LL DO:

Crust:
1. Stir together the flour and honey in a stand mixer.  Beat in the butter till the dough is the texture of cornmeal and no larger than the size of peas.  Add honey and water and beat until the dough comes together.

2. Transfer the dough to a work surface, pat into a ball and flatten into a disk.  Lightly flour the surface and then flatten the dough with 6 to 8 gentle taps of the rolling pin.  Lift the dough and give it a quarter turn.  Lightly dust the top of the dough or the rolling pin with flour as needed, then roll out into a round at least 12 inches in diameter and about 1/8 inch thick.  Makes enough dough for one 9-inch single crust pie or 8 hand-pies.
Filling:
1. Put the apples, apple cider and lemon together into a large pot. Cover. Bring to a boil. Uncover and simmer for 20-30 minutes. Mash with a potato masher.

2. Add maple syrup, salt and cinnamon to the apple mixture.

3. Use a cookie cutter to cut out a circle of pie dough. Place the dough in a dumpling press. Spoon on 3 Tablespoons of apple pie filling onto the dough and a small cube of butter.
4. Using a pastry brush, brush the edges of the pie dough. Seal the dough by closing the dumpling press.


5. Make a small slit at the top of the pie and bake in a preheated 375 degree oven for 30-40 minutes or until golden.
