Veggie-Caterpillars with spinach dip make eating vegetables a bit more exciting for kids. Read Eric Carle’s classic children’s book, “The Very Hungry Caterpillar” to tie it all together!

WHAT YOU’LL NEED:

  • 8 Cherry Tomatoes
  • 1 English Cucumber
  • 8 Flat Edged Skewers
  • 1 8 oz Container of Full Fat Plain Greek Yogurt
  • 5 oz of Frozen Chopped Spinach
  • 1/8 Teaspoon Onion Powder
  • 1 Tablespoon Olive Oil
  • 1/4 Lemon Squeezed
  • Sea Salt to Taste
  • Pepper to Taste
WHAT YOU’LL DO
  1. Defrost and drain spinach
  2. Sliced into 1 1/2 inch long and 1/2 inch width pieces
  3. Skewer one piece of cucumber lengthwise. Top the skewer with a cherry tomato. Repeat.
  4. In a bowl mix in the yogurt, spinach, onion powder, olive oil and lemon juice. Mix and season to taste.

Tip: If you cannot find grape tomatoes, use cherry tomatoes.
