Veggie-Caterpillar with Spinach Dip

Veggie-Caterpillars with spinach dip make eating vegetables a bit more exciting for kids. Read Eric Carle’s classic children’s book, “The Very Hungry Caterpillar” to tie it all together!
WHAT YOU’LL NEED:
- 8 Cherry Tomatoes
- 1 English Cucumber
- 8 Flat Edged Skewers
- 1 8 oz Container of Full Fat Plain Greek Yogurt
- 5 oz of Frozen Chopped Spinach
- 1/8 Teaspoon Onion Powder
- 1 Tablespoon Olive Oil
- 1/4 Lemon Squeezed
- Sea Salt to Taste
- Pepper to Taste
WHAT YOU’LL DO
- Defrost and drain spinach
- Sliced into 1 1/2 inch long and 1/2 inch width pieces
- Skewer one piece of cucumber lengthwise. Top the skewer with a cherry tomato. Repeat.
- In a bowl mix in the yogurt, spinach, onion powder, olive oil and lemon juice. Mix and season to taste.
Tip: If you cannot find grape tomatoes, use cherry tomatoes.
