Strawberry Butter with Matzah

Just in time for Passover, this strawberry butter will perfectly sweeten matzah.
WHAT YOU’LL NEED:
- 1 Cup Heavy Cream
- 1/2 Cup Frozen Strawberries (defrosted and juice drained)
- 1/4 Teaspoon Salt
- 1/4 Cup Honey
WHAT YOU’LL DO:
- Whisk the cream until it begins to break and looks dry.
- Drain excess liquid that has formed at the bottom of the bowl. The dry bits are butter.
- To preserve the butter, you must wash it. Blend the butter in a blender with cold water on low speed for about a minute. Drain the water and repeat until the water runs clear. Use the back of the of a spoon to drain any remaining water from the butter over a cheese cloth.
- Mix the butter with the strawberries, salt and honey until incorporated. Serve with matzah.
