With summer so close we can taste it, it’s the perfect time to start thinking about s’mores! Inspired by #WeReadWednesdays Chef Jewel shares her recipe for JUMBO marshmallows and homemade s’mores – no campfire required!

WHAT YOU’LL NEED:

  • 3 packages unflavored
  • Gelatin
  • 1 cup cold water, divided into 1/2 cup measures
  • 1 1/4 cup granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Nonstick spray
  • Chocolate chunks or chips

WHAT YOU’LL DO:

  1. Place gelatin and 1-2 cup of water into mixer bowl to bloom.
  2. Place remaining water in a small pot with sugar, corn syrup, salt, vanilla.
  3. Turn mixer with bloomed gelatin on low.
  4. Bring to a boil (240 degrees F).
  5. Carefully pour into the mixer and let whip at medium high until fluffy aerated and white.
  6. Quickly fold in chocolate chunks.
  7. Spray a spoon with cooking spray and spoon marshmallow mixture onto cookies.
  8. Let set until firm like ….a marshmallow!

My favorite way to eat these is to microwave them and let everything melt together.
