Kitchen Little Recipe: Chunky Marshmallow for S’Mores
With summer so close we can taste it, it’s the perfect time to start thinking about s’mores! Inspired by #WeReadWednesdays Chef Jewel shares her recipe for JUMBO marshmallows and homemade s’mores – no campfire required!
WHAT YOU’LL NEED:
- 3 packages unflavored
- Gelatin
- 1 cup cold water, divided into 1/2 cup measures
- 1 1/4 cup granulated sugar
- 1 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Nonstick spray
- Chocolate chunks or chips
WHAT YOU’LL DO:
- Place gelatin and 1-2 cup of water into mixer bowl to bloom.
- Place remaining water in a small pot with sugar, corn syrup, salt, vanilla.
- Turn mixer with bloomed gelatin on low.
- Bring to a boil (240 degrees F).
- Carefully pour into the mixer and let whip at medium high until fluffy aerated and white.
- Quickly fold in chocolate chunks.
- Spray a spoon with cooking spray and spoon marshmallow mixture onto cookies.
- Let set until firm like ….a marshmallow!
My favorite way to eat these is to microwave them and let everything melt together.
