With Valentine’s Day this weekend, it is only fitting to share our favorite chocolate mousse recipe from the kitchen. Enjoy!

WHAT YOU’LL NEED:

  • 1/2 Cup Semi-Sweet Chocolate Chips
  • 1/2 Cup Heavy Cream, Cold
  • 1 Cup Full Fat Plain Greek Yogurt
  • 2 Tablespoons Honey
  • 1 Teaspoon Orange Zest
  • 4 Strawberries, Sliced
WHAT YOU’LL DO:
  1. Strain the Greek Yogurt overnight in the refrigerator to make it extra think.
  2. Melt the chocolate in a double boiler or a microwave and let it cool slightly.
  3. In a medium bowl whip the cream until it reaches stiff peaks.
  4. In a separate medium bowl, mix the yogurt honey, orange zest and cooled chocolate.
  5. Gently fold the whipped cream into the yogurt mixture, being careful not to over mix. Divide the mousse evenly in four cups. Chill in the refrigerator for at least an hour.
  6. Garnish with strawberry slices.

TIPS:
  • Heavy cream will whip easier if it is cold before whipping – so keep it in the refrigerator until you are ready to whip.
  • Strained Greek Yogurt: Place the yogurt in a cheese cloth lined fine mesh strainer over an appropriate sized bowl. Cover the bowl with cling wrap and let sit in the refrigerator overnight.
  • Melting Chocolate in a Microwave: Place chocolate in a microwave safe bowl that will remain cool after continuous microwaving. Turn the power of the microwave to 50% and heat the chocolate for one and a half minutes. Stir the chocolate and the run it back in the microwave in 30-second increments, stirring between as needed. Finish heating when most, but not all the chocolate is melted. Stir until chocolate is smooth, shiny and completely melted.
  • Melting Chocolate in a Double Boiler: This is the traditional way to melt chocolate. Take a sauce pan and a securely fit glass or stainless steel bowl. Heat the saucepan with containing enough water to simmer but not touch the bowl sitting on top of it. Once the water is simmering, turn off the heat and put the bowl on top of the saucepan. Place the 1/4 cup of chocolate in the bowl, stir until it is melted with a heat proof rubber spatula, then add the remaining 1/4 cup of chocolate. Once most of the chocolate is melted, lift the top of the bowl from the saucepan and set it on the counter. Stir continuously until it is shiny, smooth and completely melted.
